Today I decided to prepare for our dinner two types of tortillas: minced meat and tuna with avocado.
If you are also bored with common tortillas and want to try one without a chicken below is the recipe for pancakes and both fillings.
I try to use as little as ready products, so did the tortilla dough myself. If you are afraid that tortilla pancakes will not come out, I recommend you buying ready-made pies..
- For 2 people
- Preparation time: 1 hour
- Cuisine: Mexican
- Level: medium
- 2 glasses of flour
- glass of water
- pinch of salt
- 2 tablespoons of olive oil
- eventually or thyme
Ingredients (filling for tortillas with minced meat):
- vegetables: fresh cucumber, peppers, onions, lettuce, chives, cherry tomatoes
- 150 g of minced meat (pork or beef)
Ingredients (filling for tortillas with tuna and avocado:
- can of tuna in water
- 2 eggs
- 2 cloves of garlic
Put in a bowl the flour, water, salt, olive oil and thyme. Mix everything thoroughly. Knead dough with palms.
Put aside the dough covered with a cloth for about 15 minutes.
The next step is to divide the dough into 4 roughly equal parts.
Each quarter rool on as thin as pancakes. Before rolling out each portion it is worth to sprinkle them with flour 🙂
Fry the pancakes for about a minute on each side with a little bit (just a bit!) of oil.
Minced meat stuffing:
Vegetables cut into oblong bars.
Fry the meat.
Smear mayonnaise on one side of the tortilla pancake. Put on the stuffing ingredients and tightly wrap.
Take tuna out from a can, strain and put into a bowl with the dill and a spoon of mayonnaise and stir.
Hard-boil eggs and cut them into eighths. Squeeze the garlic through a garlic press.
Tortillas smear the tuna-paste, mayonnaise and dill, put inside the avocado and egg and sprinkle add garlic.
Wrap tortilla tight.
Tortillas are served cut into halves. You can also wrap them in aluminum foil. Tortillas should be eaten warm, because if you will wait too long they taste like rubber.
